    Why didn't they cook properly?

    I made a lovely beef stew last night, from a James Martin recipe. The thing is, the diced carrot and potato weren't fully cooked by the time everything else was

    I know I can par-cook them before they go in next time, but any idea why this is?

    Just a thought but maybe they were too big ?? Maybe next time you could dice them smaller . Some recipes are always inaccurate with times etc .

    I'd agree with crazyfool. I find occasionally that cooking times given can be way out - like the roast lamb I cooked last Sunday !

    Sounds lovely though - any chance of the recipe ??

    Did you do it in a slow cooker? If so, you're supposed to put the stuff that takes longest to cook at the bottom.

    Otherwise, I'd go with the size thing.
