I never find that homemade muffins are the same as shop bought, they seem to have a softer more spongecake like texture.

These are my current favourites.
2cups plain flour
1tablespoon baking powder
2heaped teasp custard powder
1 cup sugar
3/4 cup blueberries
2 eggs
3/4 cup milk/6 fl oz
3/4 cup vegetable oil/6 fl ozs
Add the wet ingredients to the dry.
190c for 15-20 mins

Nigella! I have tried loads and hers are the best (How to be a domestic goddess book).
Top tip, if it says makes 12, only make 8 or 9, fill the cases up nearly to the top, then they come out all big and puffy like the ones you see in cafes.
The lemon and raspberry ones are GORGEOUS.

Oh and when I was having any muffin related disasters I froze them and use them in trifle later. Yum.
