I beat up 2 eggs (for 2 people) and mix with whatever leftover spaghetti/pasta I have, including the sauce unless it's too runny. Get a non-stick frying pan really hot, add the mixture and cook til it sets. Of course you can cook the spaghetti or pasta specially for it too!

You can literally put in anything you fancy; salami or ham are good, any veg, cheese etc. Spinach sounds good too, though make sure there's no water in it.

I didn't realise you could use pasta rather than potato
that sounds lovely.
I have used chorizo or pancetta and peas, and I've topped it with goats cheese too (prob not very authentic but yummy)
