    Cocktail sausages ideas

    ok so last week I thought I'd try honey and mustard sausages but they were pants

    I mixed honey, mustard and a bit of ketchup (someone told me to, can't remember who ) and just brushed it all over the raw sausages, bunged them in a baking tin and roasted them.

    But they were pants! Well they were fine but they didn't really taste of honey or mustard - I had thought they'd go all sticky and gooey but

    So what did I do wrong??

    Can someone help please!! I also have some chilli jam that my sil made and was thinking of putting that on instead - do I have to do it nearer the end of cooking???

    The only time I've done this (about 6 years ago) I used mustard powder and they were fab I think because it was the powder the flavour was much more intense iyswim. I got called back into the kitchen to make some more they were so successful
    I mixed up the honey with the mustard powder and drizzled it all over the sausages and just bunged them in the oven for however long they needed.
    No idea about the chilli jam - would probably half cook them then throw the jam over and finish them off

    I've been making the honey and mustard cocktail sausages quite a lot lately. The first time they turned out like yours and didn't taste of much. But I discovered the trick to them - cook them on a grill pan first (so the grease and fat drains off) for about 15-20 minutes on a moderate heat, and then take them out put them on a baking tray and put the honey and mustard on then, and bung back in the oven for about 5-10 minutes. Also advise to use a little more honey than you think looks like enough. They are lovely and sticky, and honey tasting done like this
