Mini Mozzarella out of date would you chance it?

Have made homemade pizza dough and sauce and just about to assemble them and I notice mozzarella say use by 01/07! Its only 5 days would you chance it?

if it smells ok then taste a wee bit of it but I am sure it would be fine.
