I would have thought so, but might be a bit mushy when you defrost it - doesn't really matter so long as you add some more liquid/milk and give it a thorough reheat.

I'd give it a go
it might separate when you defrost it I guess, but you could give it a stir and see if it goes back to normal. I've kept mashed veg in the fridge for two or three days and it's been fine, so worth considering if you think you may eat it fairly soon
