    Favourite low-carb recipes/dinners?

    I need some inspiration for this week and am trying to cut back on carbs as I am a bit of carb-junkie

    Have you got any T&T fav recipes or ideas for low carb dinners?

    We're low-carbing again here too. It's been warm/sunny here so lots of BBQ meat, grilled fish or marinaded cooked/warm meat (chicken, beef, pork) on/with salad.

    We have this book (downloaded to kindle which is easier to search for ingredients but some of the formatting is off) which is completely no carb, stage 2/3 is with some carbs. Recipe examples: moussaka, chicken korma (no rice), cheesy stuffed courgettes, tuna kebabs, chilli bake.

    I've just found this site which has a huge array of low-carb recipes (like bbcgoodfood but you can't search that one by low-carb ). So far I've made the zucchini and ricotta frittata which was OK, although definitely needed to add bacon/ham/sundried-toms, something savoury to lift it. Lots of the recipes look good though, so many to try!

    PS Do you have the Wagamama cookbook? The salads in it are great for low-carbing, really tasty too.

    Thanks for the hints and tips!

    I really struggle as DH is such a vegetable-dodger and there's no way he'd eat an aubergine or things with peppers etc which is such a PITA. I eat everything so its easier for me but I don't really want me to make 3 different dinners every night

    When DH was no-carbing in earnest and I was just low-carbing, I cooked carbs for me

    ETA Actually that is another fab recipe although useless for your DH - meat-stuffed aubergine with a tomato/chilli-based sauce. DH did a cooking course day once in Istanbul and learnt that and other Turkish recipes, it's yum.

    Nigella Feast is pretty good for low carb meals, also have a look on the paleo thread on here, there are a few of us sharing recipes and ideas there.

    When we've been low carbing, I've just made carbs etc for the kids and we've just had the food without the carbs. Fo example salmon with salad, I'd just make a portion of potatoes/pasta for the kids. All we did was dump the obvious carbs from regular meals (added bonus of eating less too).

    Would your DH eat cheese? I found quite a lot of cheese/veg recipes easy to do fairly low carb too as you only need a small bit of cheese to make it taste good, and bump up the veg (your DH could have the less veg/more cheese bit)

    HFWs everyday veg book has been a godsend while low carbing too, there's loads of good veg recipes in there and I managed to get my DH to eat veg he wouldn't have tried before (Beetroot last night!) still to get him to try a mushroom though.

    Have you got Nigella's 'Kitchen'?

    We've had the indian rubbed lamb chops with butternut squash, rocket and pine-nut salad a couple of times recently which is yummy I used lamb steaks though as less fatty.

    Apart from that, I'm doing the Jamie Oliver salmon-tray bake this week (the one with green beans, cherry tomatoes, basil and anchovies).

    I'm basically just trying to eat less refined carbs (not proper low-carbing) so will probably cook some potatoes for DH and give myself a bigger portion of veg.
    Jedi Boy is 6, the Little Princess is 3....

    Skipping girl, do you have a recipe or some vague instructions for that aubergine recipe? It sounds lovely.
