    Batch cooking dishes, please!

    I'm finding that batch cooking is working well for us at the moment, especially things that can be put in the oven on a timer - then it's all ready when baby is in bed, sit down to a hot meal

    Anyone got any good recipes or just dishes they like for this? We've done a few from the BBC Good Food page but they are often warming and rich and it seems to actually be sunny at the moment!

    We've done fish pie, lasagne, meatballs, there's a pasta sauce I'm definitely doing again, and there's a beef stew but that's a bit heavy for the moment. I'm going to do a meatloaf later in the week I think.

    Anything a bit lighter/more summery?

    I tend to batch cook things like chilli, curry, bolognese, chicken casseroles - more winter food really. The Jamie Oliver Green Chilli is lighter - we have tha either with a tortilla and salad or in taco shells with sour cream and guacamole.

    Or homemade Fishcakes which you can have with a salad?
    Jedi Boy is 6, the Little Princess is 3....

    Fajita filling, fishcakes. Not batch cooking but salmon fillets cook in about 2 mins each in the microwave, wrapped in greaseproof paper.

    We tend to buy fishcakes, but I do find that X +carb +veg is much more fiddly (e.g. fishcakes plus potato wedges plus veg/salad) and therefore doesn't get cooked. Or we don't have the side dishes in (e.g. we run out of potatoes - we rarely eat fajitas though we like them, because we forget to have wraps in stock, or when we do we eat 3 or 4 and the rest go mouldy). Same goes for salmon - they may take 2 mins but the side dishes don't!

    I'm a fan of one-pot dishes that can be frozen at the moment! I'm hoping this is going to ease off, but Mr S tends to be late back/working at home in the evenings so I just have lost the will to bathe the baby, feed the baby, and THEN start on dinner even if all that means is boiling some potatoes.

    This is what I'd usually batch cook (some mentioned alread)

    Lasagne
    Pasta Bake
    Chilli con carne
    Slow cooker meals (bourgignon, chasseur..)
    Pasta Sauces
    Cottage Pie

    Mostly wintery dishes i suppose..

    I could find some more summery pasta sauces I reckon! For some reason we always have pasta in and it seems less hassle than a side of potatoes, I think perhaps because we don't bother with extra veg.
    Am definitely going for that green chilli.
