Yeah i always had this problem. The trick is to keep it moving and make sure there's enough cornflour underneath so it's not sticking. Cornflour seems to work better than more icing sugar, and also make sure the fondant is warm enough as it's easier to work with/roll. Nothing more annoying than rolling it out and getting the surface perfect only to find it's all stuck to the surface you're working on and you've got to start all over again

I've actually bought one of these to cut down on the mess and it seems to work, plus it gives a guide as to how big a circle you're rolling.
