I made Chocolate guinness cupcakes with cream cheese icing for St patricks day and they were nice and moist! Not sure I would make them again they are an acquired taste!

Made some carrot cupcakes with orange cream cheese icing last night, for our Mums. First recipe I've tried from the Primrose bakery book. VERY yummy and moist, recipe made 15, gave 8 away, ate the rest! (With a tiny bit of help from DD and DH).

Great recipe, for both cake and icing, expect that it made twice as much icing as I needed, and I was generous with it! Will just *have* to make some more cakes now to use it up.

those cupcakes look very pretty!
ive been making grasshopper brownies, banana and brazil nut loaf, pistachio cake, baked cheesecake!
I too am dieting so i give it all away so i dont eat it all!! its a dangerous thing a love of baking!

I have really got into baking sourdough this year. I tried some a friend had baked and found the taste so moreish and delightful that I had to try it for myself.
It's quite an involved and time consuming thing to start with. you have to prepare the sour dough starter first, which is basically making a sloppy flour and water paste. this you leave for a week or two in a jar, the little bacteria and yeast that naturally sail around in the air infiltrate your starter and begin to set up home in the sloppy paste. it's really quite a lovely thing seeing your little jar turn into a small colony of bubbling wild yeast.
The bread aswell i have been making is very easy once you realise that it takes time more than effort. a little knead here a little knead there. overall a loaf takes a day to make once the starter is up and running. but its really worth it in the end. My bread has been getting more and more tasty as time goes on, with the crust getting crunchier and the sour taste more refined (it's really related to the starters previous feed and the salt content of the loaf).
anyway sourdough is what I have been cooking mostly over the last few months. with seeds and nuts . yum

i've been making:
chocolate brownies with choc fudge topping
real (chocolate) fudge
banana loaf
chococlate muesli bars (sensing a theme here?)
rhubarb cupcakes
S made Tasmanian devil's food cake from a book he got from the library at school which was delish
i am also trying not to bake too much as i just don't trust myself....
