    A very simple cupcake recipe please

    I'd like to make some plain ones for kiddies to decorate. I'm not an experienced baker so need to keep it simple. Please help!
    Apart from ingredients what else do I need?

    I'd like to have orange icing on them (halloween theme), how do I achieve this?

    The cupcake recipe in the Damsels classic recipe post (I think it's the page before last) is amazing. Hats off to Chickpea

    I've made orange icing in the past with just regular butter icing but adding orange paste to it. I get it from a specialist cake makers - not sure where else you can get it. Waaaaaaaaaay more economical than generic food colouring and ime more accurate (haven't tried orange food colouring mind you but comparing it to other colours)

    I think the Hummingbird Bakery recipe is fabulous - really easy, uses very little butter, and makes flat top cup cakes which are easy to frost. I'm sure you'd find it by googling, but if not, please post and I'll type it up for you.

    WRT the orange icing, I agree, the pastes are the best. I saw some in Asda the other day, and Sainsbury's so you should get them at most places.

    I would put orange essence in the cupcakes instead of vanilla, and orange essence and some orange zest in the icing, it will taste yum.

    I would simply crack eggs into scales then add same weight of sf flour caster sugar stork plus tsp baking powder tsp vanilla essense however orange zest would work instead of essense yum

    Just bung in and beat all together I use a big massive bowl a massive wooden spoon and some good old elbow strength!my arm always hurts but they always rise perfectly I use 160 fan oven about 10mins I check them through door

    Icing you could buy paste or just use food colouring both will work

    The most basic recipe I know is 2 eggs weighed in their shells, with equal parts SR flour, butter and sugar. Cream the butter and sugar. Add 1tsp vanilla, stir in sifted flour. Bake 180C for 10-12 mins (my oven is rubbish, so those timings may not work for normal ovens)

    Thank you x I'll go to Sainsbury's tomorrow. I'll do a batch tomorrow and see how it turns up.

    Do I use a muffin tin or special moulds?

    Exactly this. I am informed it's the W.I. way, not that I'd know. Drop the oven temp to 160 if you have a fan oven.

    Really nothing can go wrong.

    As to deocorating I'll bet you can get all iknd of cupcake toppers in Sainsburys or where ever.

    My very first attempt and made a mistake of forgetting the baking powder used Chickpea's recipe used normal sugar instead of caster.
    It feels a bit dense but still soft & tasty.
    I get a whiff of egg, is that normal?

    I make orange icing with red and yellow bog standard food colouring. Just add drop by drop til you get the shade you want. I only have red, blue and yellow and make whatever colour from them!

    If you make a flat glacé icing (icing sugar and milk to the right consistency) its fairly easy to buy those writing icing things and pipe on some bats, pumpkins, ghosts etc. I'm not artistic at all but the came out pretty well

    Hi Chell,

    Very true...!! Having said that, a friend did make these cupcakes, took them into work and got wonderful feedback from everyone there.

    Definitely worth a try.
