Can someone recommend me a pudding?
Well I wasn't going to be cooking anything special for Easter, but Dh has invited a friend round for Sunday lunch, so I will. It'll either be a roast chicken dinner or morroccan chicken with cous-cous and roast veg.
Haven't a clue what to do for a pudding. Nothing too heavy obviously but has anyone got any inspiration?

I made a gorgeous Chocolate Lime Pie a few weeks ago. It was so easy to make too.

When I cooked this http://jopratt.co.uk/archives/120 Chicken & Apricot Tagine last year - love the pomegranate sprinkled on the cous cous - I followed it with Nigellas chocolate orange mousse http://www.nigella.com/recipes/view/...te-mousse-1145 I add some Lindt's Chocolate orange in the chocolate mix. Delish xxx

Easy, quick, delicious - Eton Mess.
Get a load of meringues from the supermarket, some fresh raspberries and or strawberries (clean, dehead and chop up), some double/whipping cream and for an extra nice thing some raspberry coulis (from M&S). 2 minutes before you want it, just bash/break up a few meringues in nice glasses or sundae dishes, and mix in the rest of the stuff. Serve - perfect! The meringue is sweet but light, the fruit/coulis is tasty but tart, and the cream works with both but if you whip it then it's not too heavy.

I second the Eton mess idea - easy, tasty, light and quite decadant. If you want to give it a more middle easten flavour to go with the moroccan chicken, you can add a little rose-water or orange flower water to the cream before you whip it. That gives the cream a subtle flavour. Just don't add too much, a little goes a long way.

I third the eton mess!
its equally nice with chocolate meringue- add cocoa powder, balsamic vinegar instead of cornflour and some chopped choc!

The chocolate lime pie is chilling in the fridge. I HAD to lick the bowl and it was lovely - almost like sherbet. Yummmy.

Well, it came out of the tin beautifully (I had thought it might fall apart) and was utterly scrumptious. Will def make that again. I think it would be lovely with a ginger biscuit base too.
