What do you serve with Roast Chicken?

I have a chicken in the fridge for tomorrow lunchtime but my cooking mojo has gone

i just cba.

I have potatoes, carrots and BNS in the fridge but can buy other veg in the morning.

For some reason roast pots and carrots just seems a bit

....

Ideas?

I was going to say roast butternut squash! I have this when I fancy a change. Jamie O has a nice recipe where he sprinkles chilli and spice on it before roasting and it makes them sing!

Stir fried veggies, mange tout and spring onion with butter and fresh mint?

I also saw a nice recipe in an abel and cole flyer for roast parsnip with cream, thyme, garlic and mustard. Give me a shout if you'd like the recipe. Might be better with lamb though.

Oh yes, a roast sweet potato/butternut squash/carrot/potato/parsnip combination is always really nice & very easy to do.

Or what about caulifower cheese as well?

LOL - on the odd occasion I do a roast chicken I tend to do it with salad or carrots/peas/potatoes.

Sounds nice - Tilly might like?

I do have a BNS but it is a big beast and tbh i had it earmarked for a veggie crumble next weekend...but could use some of it.

I like to do rice with bacon and peas with roast chicken and then just salad.

Or could do mash (could add in carrots and BNS to mash) and peas or broc.

Or mash pot and yummy spiced red cabbage

Here it is:

Parnsip and parmesan gratin

(serves 4-6)

500g parsnips
175ml double cream
2 cloves garlic
2 sprigs thyme
1 heaped tsp dijon mustard
nutmeg
4 tbsp grated parmesan
salt and pepper

45 mins at 200 C
