Easy family fish recipies?
Care to share any of your fish dishes with me

I always try to serve fish 1-2 times a week, but am in a real rut with what I make. I can't think far beyond
fish pie
fishcakes (but requires remembering to make in advance!)
pan fried with chips/wedges
baked fillets
I'm limited by availability ... do any of you use frozen fish succesfully?

My current fave is Salmon and Leek Lasagne
Very, very easy too!!
Microwave salmon fillets (I use the odd-shaped cheap ones from Sainsbury) for 5 minutes or so until you can flake them.
Meanwhile fry some sliced leeks in butter until they go a bit soft.
Mix the flaked fish and leeks together and layer them with lasagne sheets in a deep dish. Pour a jar of Dolmio white lasagne sauce over the top and bake for 30-40 minutes.

I try and serve fish at least once a week too.
Salmon : wrapped in parma ham, with tomato and mascarpone sauce with pasta, salad nicoise, with a lemon and herb butter sauce, teriyaki, with an asian marinade, with pesto
White fish : with a herb crust, baked with tomatoes and herbs, in homedone breadcrumbs
Prawns : with a chilli dressing, and pea risotto, paella (with chorizo), in a stir fry etc

Prawn and pea risottp, or just done in a sauce with pasta or noodles is great and always a hit

I use frozen fish
It really works for pies and saucy dishes.
I like to take any firmish white fish and layer a dish with lemon slices, fish, salt, pepper and then another layer of the lemons. Bake until done (15-20 mins) It's dead easy and very delicious. Usually served with roasted asaparagus and orzo with pesto
I also like to saute salmon with a ginger miso glaze and serve it with shredded cabbage quickly sauted and then tossed with a spoonful of chinese black bean and garlic paste.
Another gorgeous one is fish en papillote. I took Gordon Ramsey's F word recipe and just put whatever I can find in the parcel. Usually it's sliced spring onions, garlic, shredded cabbage, carrots and peppers, bit of olive oil and salt. Fenell is fab if you can get it. Then roll up or fold any kind of fish with fresh chopped herbs. Seal up the parchment paper 90% of the way and give it a good glug of white wine. Seal it up all the way and bake for 20 mins.
It's a really easy prep-ahead dish that you can pop in the oven when guests arrive and it's very impressive when you rip open the paper on their plate. We like to serve it with a salad and some crusty bread to soak up all the amazing juices.

I made haddock and spring onion risotto last week, it was lovely and really easy to make, the recipe says smoked haddock, I just used normal haddock fillets http://www.bbcgoodfood.com/recipes/3...d-fish-risotto

dingbatsbird - that sounds good ... I don't normally use jarred sauce, is it just a white or cheese sauce really? I could def give that a bash
Angel, all your ideas sound totally mouthwatering!
RL - I'd forgotten about that risotto (assuming its Jamie's one) - will def give that a go again, it used to be a 'staple'.
For your roast fish one - I have an aversion to Schwarz spices (rip-off!!)what would do as an alternative? Also, I don't have an ovenproof frying pan, would it work ok in a roasting tin?
Vikki I'm definitely going to try your rissotto too - the boys love rice so that is such a good idea, and so easy

I bake white fish (cod, pollack etc) in lazy cheese sauce (mix creme fresh with strong cheddar and mustard so it's thick) dollop on fish and bake for about 25mins.
Or pan fry fish with new potatoes, green beans and toms (all in same pan, potatoes go in for 15mins, then fish and veg at end)
