    Diabetic/Celiac friendly dessert?

    Hi

    I am after a dessert idea (Recipe preferably) that is good for a lady who is diabetic & Celiac!!!!!!!!!!!

    We usually do a meringue based dessert for my auntie, but that's mostly sugar, so not too good for a diabetic!
    How about a fruit compote of some sort? Rice pudding dressed up to be a bit posh?

    Whisk up egg whites, then add 1-2 tbsps of sugar free jam/marmalade. You can either bake in ramekins until crispy on top, or poach spoonfuls in simmering milk and serve with custard made with the milk. I made this for my coeliac friend and it was lovely.
