I have one and a bit tubs and hate the thought of throwing them but have no idea what I can use it for :oops:
I bought it to make fudge with the kids, which was great but VERY sweet so could do with other ideas

I seem to recall I used it in some soup :puzzled:
I think I made broccoli and stilton soup from an Asda mag recipe and sure it used mascarpone.... :scratchchin: It was lovely and v easy but have lost the recipe now.

Tiramisu? Delias shortcut version uses a tub of marscapone mixed wih a 175ml pot of whipping cream, loosly whipped (fold them into each other). You add a little icing sugar to that to make the creamy stuff for the creamy layers. The base is sponge / sponge fingers soaked in strong instant coffee (cooled) with some booze added (I normally add Marsala). Do a layer of sponge, layer of creamy stuff, layer of sponge, layer of creamy and sprinkle the top with cocoa powder.
I use that cream / marscapone mix to make all sorts of made up triffly type concoctions.
Or just use it clotted cream on the side of a bowl of tart stewed fruits or a tart crumble.
You could use it to ice a cake, or agree tiramisu is yum!
Just did a quick search on the Good Food website and it came up with loads o of yummy looking things, I think i might buy some mascarpone tomorrow :lol:

Oh yes - fresh tomato soup with marscapone swirled in before serving is divine! :thumb:

For an adult pud that's a bit different from the usual tiramisu, you can mix it up with the zest and juice of a couple of limes, a tablespoon or two of rum, and icing sugar to taste.
Serve in small glasses with some crisp biscuits for dipping.
In the savoury department, tomato and marscapone pasta sauce is a bit of a modern classic.

I do a lovely pasta dish with marscapone, shown to me by my sister.
Fry bacon, chicken, veges etc in a pan, cook some tagliatelle or other pasta. When meat/veges done stir through marscapone and mix with pasta.
Its lovely, quick and great for using up meat and veges.:thumb: :thumb: :thumb: :thumb:

Not too keen on tiramisu so think I may give Mrs Bunnys pasta a go as have all the ingredients for that :thumb:

I have recipes for a cheesecake that uses mascarpone and also as a topping for a lush carrot cake !

I've made it before and it's lush.
How weird though, I was going to start a thread exactly the same as I have half a tub in my fridge! I used it to make pasta with a chicken and mushroom cheesey sauce.

I've been making Gordon Ramsey's smoked haddock risotto, it is fab and really easy. A new staple in our house.
