chillis without touching them? :puzzled:
I have just made chilli for tomorrow and I always use fresh chillis but of course make the mistake of somehow always touching my mouth / eyes afterwards :doh: which of course leads to a really sore burning sensations.
Any tips of how to do it ?

Wear latex gloves. I think I saw Nigella or someone doing that.
Or just buy Lazy Chillies.

I wear gloves :oops: or I bung it in the processor if I can be assed with the washing up .

Although I remember seeing a celeb chef using a knife and fork once - can't remember who tho:doh:
If you make sure you only touch the outside you should be ok without gloves :wink:

Hold the stem with one hand and cut slices off the chilli with a pair of scissors, straight into whatever pan/bowl you're gonna cook/use them in.

Now, it's a popular misconception that the heat is in the seeds. It's actually in the oil that holds the seeds to the membranes. The seeds themselves aren't hot.
You can still take the seeds out though by this method though; make a slit all the way up the chilli with the scissors, then scrape the seeds out into the bin. But unless you then wash the oil off the insides of the chilli (and the oil isn't water-soluble btw) then you still get the heat. Anyway, surely you want some heat if you're using chilli in the first place?:puzzled:
