just wondering does anybody have a recipe, or link to one, for Satay chicken (or just the satay sauce) - an easy one preferabley :wink:

Not hugely authentic, but the best I've ever had, including that in Indonesia. It's my mum's receipe.

4tbs peanut butter
4tbs vegetable oil
4tbs soy sauce
1 medium onion, chopped
1 clove of garlic
50g/2oz brown sugar
juice and rind of 1/2 lemon
1tbs ground coriander
salt and pepper

1.5 lb lamb, pork or chicken

Place ingredients (except meat) in liquidiser and blend until smooth. Cover meat with marinade for at least 2 hours, preferable about 24 hours.

Take meat out and reserve marinade. Grill/bbq meat (best on skewers), boil marinade vigorously and pour over or serve as a dip.

This is really SOOOOOOOOOOOOOOOOOO good.

ETA: it's really a marinade rather than a sauce. If you want it 'saucy' then add a can of coconut milk when boiling.

It's lovely served with oven-baked tatties, with the sauce/marinade mashed into the potato.

This sounds fab.
Will defo try it.

Do you think it would be ok without the onions?
Also would it be ok over chicken breasts and not skewers?

Personally I think it would be fine without the onions and also absolutely fine not on skewers. I would also be tempted to just score the meat and leave it as fillets and just grill it (if that makes sense?!)

Let us know how it goes - I'm definitely going to be doing this in the next couple of weeks!

Yes, scoring chicken would work really well.

I forgot to add 1/2 tspn of cayenne to the receipe.

After typing it out I've been craving it so will be making it this week.

1.5 lb is probably about 800g, so perhaps would serve 4-6?

Hi :smile: I made this marinade last night and have it in the fridge for tonight! Question - when you say boil marindae, do you mean heat it? Or put it in a bowl on boiling water?

As you've had raw meat it in it needs to be boiled to get rid of the bacteria. I just shove it in a pan and maybe add some water so that it doesn't stick, but then boil off the extra liquid. Or make extra for the dipping sauce.

I would personally say she means put it in a pan and boil it!!

Ok, i'm with you now, i'm just putting the sauce into the pan and bringing it to boiling point.

Donna, i wont have any raw meat because i am going to grill the chickens (scored) and will pour the sauce over it just before serving!

Really looking forward to it now.

It really would be nicer if you used some as a marinade first. It makes the chicken so tender.

it was lovely :wink: however i think i used too much peanut butter :doh: either that or i think i will have to use the cocunut milk option next time!
but will defo be trying it again!

Oh good. I made it last night too, as I had been thinking about it ever since I posted the receipe. I only marinaded for about 2 hours, which was fine, and put half in the freezer with two chicken breasts so they will be very marinaded by the time we have them.
