the eating of the freebie half sheep continues.
what can I do with a little rack of cutlets?
I have a big wodge of rosemary and we also have mint growing in the garden (and thyme in the fridge)

marinade in olive oil, garlic, thyme and lemon juice - delish!

Grill on grill pan and serve with salsa verde - don't know if there's a specific recipe to follow for this but I just use lots of herbs (probably predominantly mint for lamb with parsley, rosemary maybe coriander etc), olive oil , squeeze of lemon and garlic and whizz it up in blender. It's really yummy and adaptable for your tastes.
I make the same sauce for fish but use mainly tarragon/dill.

marinate in honey, mint sauce and rosemary...yummy.
