Does anyone have a particularly good recipe, and instructions on how to make/store it? :puzzled: :oops:

I made this two nights ago - obviously carrot and cabbage, but also grated celeriac and spring onions. The dressing is half yoghurt, half mayo and 1tsp mustard. It was scrummy!

Basic recipe is shredded carrot, onion and cabbage in mayonaise. I tend to chuck whatever I've got around in - apple and sultanas work really well!
I'd agree with the celeriac added it and a wee smidge of wholegrain mustard, tastes lovely !

One of the best things to do is grate up all the carrot the night before and then leave it in a colander over a bowl in the fridge. TONNES of water will run out of the carrot and this will mean the coleslaw is less watery and more tasty! If you are in more of a hurry you can just stand it for a couple of hours, maybe put a weight on it.
Anyway I just grate up loads of carrots, slice up a white cabbage and then add a bit of finely chopped red onion or spring onion. Mix well with mayonnaise (or you could use half yoghurt) and then add a dash of salt and most importantly some SUGAR and some VINEGAR to taste. Just add a spoon or so of each first and then mix and then keep tasting until it's 'right'. This really brings out the flavour in it and gives it a nice tang. I always get a lot of compliments on my coleslaw....:sunglasses: .

I've got a yummy recipe but it's a bit different. It's an asian slaw with peanut butter and ginger in it. I'll post it if you want.

OOh that reminds me, a pinch of thai green curry powder works really well in coleslaw....

Just to add - I made Egg Mayo at the weekend for our picnic and I followed Spacedusts tip of adding a good dash of garlic powder and MMMMMM, MMMMM - it was delish!!!
I also made coleslaw, very nice but I didn't bother leaving it to 'drain' and over night in the fridge the salt must have sucked all the water out the veg so it was floating in a kind of pool come the morning. I should have left it in the colander over a bowl!
Anyway - the garlic powder and the egg mayo is TOP!
