View Full Version : quick help re. fillets of lamb - healthy sauce?

DH has got some lamb fillets out of the freezer for tonight - he reckons they need a sauce, but I is on a diet, innit. He won't go near a tomato based sauce with his meat, so what is left that is low fat?

Any help muchos appreciated!

WELL my fave thing with lamb at the moment is one of two things:

One is a Moroccan dish

Roasted Veg with couscous and moroccan marinated lamb.

Roast veg (I do courgettes, peppers and onions)
Couscous is just stock, harissa paste, chopped dried apricots, mint and or various other fresh herbs - shed loads of them.
Mix the couscous and veg together. Liberally add lemon juice

For the lamb, marinate in a mix of moroccan spices and olive oil and then bake to your taste.

For a SAUCE I always do fat free greek yoghurt mixed with harissa.

YUMMY!!

OR Lamb with greek couscous

Couscous, olive oil, black olives, lemon juice, cucumber, chopped toms, chopped red onion, shed load of herbs again ( I usually use dill, mint, parsley and thyme)
Roast lamb (I never marinate it although I should start doing this actually) I normally just liberally sprinkle with black pepper which is lush!!!
SAUCE - tzatziki!! (basically greek yoghurt with grated cucumber, mint, dill and garlic)

Now not sure if you have ANY of those ingredients in, but both recipes are low fat and healthy and very filling and would work well with neck fillet.

Maybe it may give you some sort of inspiration............

If not - I think capers and anchovies go really well with lamb (although not sure how you could make a sauce out of them that's low fat - half fat creme fraiche????)

I do have some creme fraiche in.... we had anchovies last night so not again tonight, but I like the idea of the harissa (which I do have in).

was thinking about this in the shower this morning (GOD I need to get out more!!! In my defense I was mentally putting my shopping list together in my head for Mr Kinn to go to the supermarket with!) - what did you have in the end BL??

hehe, maybe you telepathically reminded me that I hadn't replied, as I was thinking about this this am too...

DH was having none of the tzatsiki/creme fraiche ideas - not cos he doesn't like that but because we've had a lot of things like that lately stuffed into toasted pittas.

In the end he roasted the meat with green beans and potatoes, and we had a scrummy gravy with a bit of redcurrant jelly in (as an aside, we've just got back from a pub lunch and I had cumberland sausage *yum* with cumberland sauce *not yum*. The sauce was like runny redcurrant jelly, SO sweet. I couldn't manage it all!)

And carrots! I think he was desperate for some non-foreign-muck, bless! Last night we had the griddled tuna (sorry Kattkinn!) and celeriac skordalia - triple yum. Think I must honk of garlic today though as shed loads of raw garlic went into the skordalia!

ooh that sauce sounds absolutely divine!!

Well tonight I'm off out to a v nice restaurant so shall be totally indulging in some scrummy non alcoholic cocktails first and then mmm I'm not sure. They do the most amazing foie gras at this place but I can't have it so I'll wing it later. SO looking forward to it!! :ellie:

Tomorrow I've got family coming round for lunch so I'm making the tandoori chicken from Biba's recipe. In fact off to marinade my chicken in a mo!!

Then Monday we WERE going to have roast duck but DH said there wasn't any at Waitrose this morning :yeahright: so he got a (v lazy for me!!) slow roasted marinated pork belly piece that we'll have with roasted new pots, roasted carrots and spring greens. YUMMY!!!!

How about you chickie??

BL I often have a tropical salsa with lamb fillets. I know I'm a bit late to this thread though: :rolleyes:

Diced mango or papaya, diced red onion, coriander, a sploosh of chilli sauce (sweet chilli sauce), some lime or lemon juice, and bob's your uncle!

Very low fat and calorie and utterly luscious.

Hope you're having a fab night. The cocktails sound gorgeous, not much in the way of cocktails in the village that I live in, the local does good ginnies or real ale though! I'm actually itching for a night out, a friend's daughter is coming back from Uni v. soon and we've sounded her folks out about her babysitting (she's done this for other friends and is really trustworthy). So apparently it's fine if she can bring her boyfriend! I've got to have the odd night out - after all, just got back from TK Maxx with this gorgeous pair of dark brown leather peep toes (Rosa Rosa? Not sure if I've heard of them before). I've got to have a chance to wear these things and the local farmer pub isn't one of them!

That tandoori chicken sounds nice, might have to go and have a peek at that thread after all. I didn't go into it as I've never made it before so couldn't contribute. I guess I thought you needed a brick oven or something! Let me know how it turns out hun? Hope all your family enjoy it.

Belly of pork, yum - I LOVE it but it wouldn't do much for my jelly belly. I sorted out masses of clothes today and seeing what fits now and what still doesn't etc - it's my tummy that is letting me down! It's going to be back to counting points for me - ho hum - just when I was starting to get into my food again.

We had turkey schnitzels with celeriac coleslaw, wedges and salad tonight, celtic lamb soup for lunch tomorrow and going out for pub dinner for friends' birthdays early evening (after we've taken half a deer out of the freezer as well - one of the perks of DH's job as a gardener, he was tending the grounds of a local castle when they were doing a deer cull. Problem is, it's frozen in massive pieces!)

Minky that sounds really like the mango salsa we had with the duck salad I was talking about. Yum! Hope you're having a lovely weekend too!
