I really like Chorizo but I never eat it, mainly because I dont know what to eat it with etc
Any suggestions?

They sound lovely. I dont think my OH would eat chorizo, he can be fussy about things like that.
Jambalaya/paella! Yum - we have jambalaya with prawns or chicken nearly every week - send you a recipe if you want (rice based) - best thing is cookds in one pot.

We do a recipe called prawn cataplanas which is gorgeous (portuguese) which is prawns/seafood in spicy tomato sauce with chorizo. Serve with rice and big crusty bread. Very tasty.
You could always buy a little taster off the deli counter to see if you like it or not! - edited - sorry re-read your msg and you like it!.

Mmmm jambalaya is delish and if your OH is a bit wary, just don't tell him that there's chorizo in there.... or he can pick it out :smile: Haven't got a recipe because I've never actually cooked it myself, only eaten it (it's one of DH's specialities) but it sounds like Azana can sort you out.

We don't put chorizo in paella in Spain, but I am sure it tastes yumyum!
You can make penne with tomato sauce and chorizo. Just cut the chorizo and fry in a little olive oil, the take it out and cook your onion and tomato sauce in the same pan so it gets the flavour. Put the chorizo back in, add the sauce to the pasta, smother with cheese and put under the grill until nice and bubbly.
I LOVE simple peasant food like fried eggs, fried chorizo and chips. If you like it add some black pudding mmmmm!!!
There's recipes for chorizo with cider, but it's the kind of thing I would eat in a bar but not bother to cook myself, so i would have to dig them out.
If you are cooking with it, buy a sausage, not the pre-sliced stuff.
I also add it to pots and casseroles, like lentils stew (similar to lovely lentils by Annabel karmel, ithout the sweet potato). I always fry it gently first and add it last, otherwise it makes food too rich and greasy.

OK recipe coming up - who knew it would be so popular!!! Sort of copied from M+S one pot book - which is a fave of mine.
1 chopped onion
1 chopped red/green pepper
1 chopped garlic clove
200g of long grain rice (more than m+s mention but I am a pig)
1 tbsp tom puree
1/2 tsp - ish of thyme and oregano
a sprinkling of chilli flakes - say under 1/4 teaspoon - to taste
150g or so of chorizo in chunks
2 tomatoes chopped roughly
salt/pepper
3/4 pint of stock (chicken or veg)
2 chopped chicken breasts or you could use thighs
Brown the chicken and remove from pan
Cook the onion and peppers for 5 mins or until soft, add garlic cook 1 min
Add rice, cook 5 mins whilst stirring (all above on medium heat)
Add tom puree, thyme, oregano, chilli flakes, chorizo and toms. Season with salt and pepper, cook 2 to 3 mins.
Return chicken, add stock, bring to boil, cover and let simmer on a low heat for 20-25 mins til rice is cooked
Let stand 10 mins before serving.
NB check whilst simmering as the liquid can be a bit touch and go.
I've no idea why they get you to cook the chicken first - I sometimes don't bother.
If using prawns, just add cooked ones at the simmering stage so they heat through properly - in which case you don't need the chicken - clearly.
