Hello!
I am going shopping tonight for weekly shop.
I need inspiration for good healthy meals that are not going to take for every to cook (work full time & by time I get home I am very tired!)
Have a husband with the appetite of a horse as well so need to be wholesome.
Any ideas?
Mind has gone blank due to headache (see pregnany topic!!)

Hmm, prob a bit late now but do you like chilli? I make one just with one of those Schwartz spice mixes, it's dead easy. You just brown the mince, add the spices, a tin of tomatoes, a tin of kidney beans and some water and let it simmer for about 20 mins. It's gorge - plus dead easy, and dead quick.

mmm Diddlum I dont particularly like chilli but you've made my mouth water!

Get some chicken pieces... doesn't matter which, just as long as they have the skin on. Sprinkle with herbs - fresh or dried (your choice) and garlic (powder will do) and a splash of balsamic vinegar if you have it. Roast in the oven for however long they take to cook depending on size - roughly 20 mins then add a box of halved cherry tomatoes for the last 10 mins. Swish some broth or water around the roasting pan after everything's been take out.
Serve over ANYTHING and it's delicious. Zero effort.
Made this one up last week when all I had in the house was chicken and cherry tomatoes.

GG, I'd recommend buying either BBC Good Food mag, or their Easy Cook mag, I've started cooking so much nicer healthier meals since buying GF each month, and I'm always shocked at how quick they are!
Here's a new fave....
Salmon Rarebit
Serves 1 as lunch (we double it for dinner)
Prep 5 mins; Cook 7 mins
Slice granary bread
1/2 212g can Wild Alaskan Pacific Salmon (I used Princes one), drained and flaked
1-2 spring onions, finely sliced
2 tbsp cottage cheese
1 tsp grated horseradish (optional)
1 tbsp grated red Leicester cheese
Salad to serve (watercess/spinach is recommended)
1. Heat grill to high. Toast the bread lightly on both sides.
2. Mix the salmon and spring onions together and season with pepper only. Spread onto the bread. Mix together the cottage cheese, horseradish (if using) and cheee. Spoon on top of the salmon.
3. Grill on a high shelf for 1 min, then lower the shelf and continue to gril for 3-4 mins or until the toppong starts to brown. Serve straight away with salad.
If time is your problem, you can buy some really lovely pasta sauces from asda, tesco etc. They are in the fridge section as they are fresh i.e tomato, garlic, basil and oregano. If you buy fresh pasta also, it's gorgeous - maybe have with a salad.

Another inspired recipe for me :D Need to get a wee book of "quick and simple recipes for when I can't be @rsed/haven't had 2 minutes to myself/don't have much in the house" for the next few months... Keep them coming :ellie:

Quickest one I can think of!
Jamie Olivers parsnip and pancetta tagliatelle. Fry thin strips of parnsips and some bacon or pancetta in a pan with some butter and rosemary (optional). Toss into drained hot tagliatelle - but reserve a little cooking water with the pasta to mix. Add some handfuls of grated parmesan and more butter, stir. That's it!

Sersha - that parsnip recipe is ace. Always used to cook it when we had a glut of parsnips and no time. It doesn't work with many other pastas though and as James is allergic to egg he can't have tagliatelle (haven't found an egg free version yet....)
