i have an inexplicable craving for minestrone soup which i normally can't stand, so what are your recommendations for best veg & pasta, or is there a standard set of veg that goes in it?
thanks

This minestrone recipe is the only one I ever use:
I got it from the fab Mrs Buster on HB!
I have just copied and pasted it here and make no apologies for that whatsoever!!!! :wik:
Minestrone;
Heat a little olive oil, add 100g chopped pancetta (you could use bacon), cook til slightly crisp. Add 1 chopped onion, 1 diced carrot, 2 diced sticks celery, 1 diced large potato and 2 cloves crushed garlic. Cook for 1-2 mins. Add 3Tablespoons tomato paste, 2 tins chopped toms, 750ml beef stock and 1 can cannellini or borlotti beans. Bring to the boil, simmer (covered) for 40 mins.
Add 155g macaroni or other dried pasta, 75g shredded cabbage and cook for a further 15 mins. Season with salt and pepper, extra virgin olive oil, shaved parmesan and nice bread.
Serves 4 as soup or 2-3 as a main.

You should have said- I have become the master of Minestrone. I could have posted you some!
I use Jamie Oliver's recipe as a base but put in my own veg which varies, but is usually:
Celery
Leek
Savoy cabbage
Fennel
I also add fried pancetta & serve with lots of Parmesan. Yummy!
