... creamed coconut? Savoury or sweet, I don't care. I have four sachets in my cupboard and no clue what to do with it. I bought it originally to make a curry, but then realised I don't know how to use it!!!

Thai curry?

I presume you mix the coconut with water to make a milk?

You could also use add it to cooking rice for yummy coconut rice.

Thai curry is mega easy. Here;s my "recipe".

Use 1 tablespoon of red Thai curry paste, and stir fry it for a few minutes. Add your coconut milk and a couple of teaspoons of Thai fish sauce (essential ingredient). Add chicken/lamb/fish, and while that's simmering away, slice veggies into fingers - carrots, courgette, and cauli/broccoli into florets, open a can of baby corns, chop up some peppers and asparagus - anything really.

Microwave them for 2 mins or so until just hot, and add them to the meat when it's cooked - cook a wee bit longer until all is steaming hot and serve with basmati rice.

Well, you could try this. (http://www.deliaonline.com/recipes/stir-fried-chicken-with-lime-and-coconut,1347,RC.html) Which is pretty fabulous and (aside from all the chopping) takes 5 mins to cook.

Again, you would have to water it down to make coconut milk. I think that Nigel Slater has some recipes that use coconut cream itself which he prefers to coconut milk - but my recipe books are in disarray and I can't find one.

Thai coconut rice is lovely. Don't have a recipe to hand but it's such a nice flavour

mr backson has an awesome recipe for goan fish curry which i can dig out if you're interested. we can't seem to find creamed coconut anywhere out here so would love to know what it tastes like with proper ingredients!

Thanks all! Now I can't decide which to try... think I might start with the Delia one as it looks really simple. There are no instructions on how to use it, but watering it down with milk sounds about right. I think thats why it's lingered in my cupboard as I wasn't really sure how to turn it into coconut milk!
