There are 2 winners this month so I thought I'd post both as I had no idea what to do otherwise. Hope that's ok with everyone.

First recipe is Delias Blueberry Muffin Cake with Streusel Topping (http://www.deliaonline.com/recipes/blueberry-and-cinnamon-muffin-cake-with-streusel-topping,1275,RC.html)

And the second is Bakewell Slice from Nigella's Feast, which I haven't got so if Jo wouldn't mind adding it to this thread:cheer2:

You can make either or both, just don't forget to post how you got on :ellie:

Where is the bakewell slice recipe? Where is it? WHERE IS IT?????

I am trying to work out which to do and if I do the streusel thingie I'll have to change the blueberries to some other fruit and change the hazelnuts to some other nuts that go with the other fruit... so if the bakewell slice doesn't contain anything dodgy I'll probably go with that as it will involve less thinking!

Okay stopping moaning you bunch of old whingebags. I have been very busy. :hissyfit:
BAKEWELL SLICE

Serves 8-10 (or 1 Damsel)

For the base
225g plain flour
60g icing sugar
pinch salt
225g butter

For the filling
150g butter
4 eggs
150g caster sugar
150g ground almonds
60g flaked almonds
325g jam

Preheat the oven to gas mark 4/180c and put in a metal baking sheet to heat up with the oven.

Put the flour, icing sugar and salt into a food processor and blitz to remove lumps. Add the butter and process again to a crumbly mixture that is beginning to come together.

Tumble into a foil roasting tray - about 235 x 300 x 60mm. Push and press patiently into the base of the tin: you will feel you don't have enough, but I promise you will. Cook in the oven for 20 minutes.

For the topping; melt the butter and set aside. Put the eggs, sugar and ground almonds into the processor. Blitz the mixture together, and then toast the flaked almonds in a dry pan.

When the base is cooked, take out and let sit for about 3 minutes before spreading it evenly with jam. With the processor motor running, pour the slightly cooled melted butter down the funnel into the other frangipane ingredients and then pour this golden mixture over the jam-covered base.

Top with the toasted flaked almonds and bake for 35 minutes. Cool before cutting into 16 slabs.

Note: You can eat this with cream or ice cream, but I love it eaten just as in the fingers as it is. Its at its peak with the breath of the oven still on it, but cold leftovers are not to be scorned at.

I dont actually have a food processor so I shall be doing it the long hard way.

Joanna x

PS Nigella used to always use Raspberry Jam but after reading someone elses book she tried Plum Jam and uses that now!

NB - when she says a foil roasting tin, wtf does she mean? And why?

One of these? http://www.wfdenny.co.uk/?bWV0aG9kPXByb2QmcmVmPTc1OSZwcm9kX25hbWU9Rm9pbCBSb 2FzdGluZyBUaW4=

She says "I use a diposable foil tray to cook this in: it makes the base absurdly crisp and melting, the slices are easy to remove and there's no washing up."

03-05-2006, 03:25pm

OK, which of these do you think is closest to what she is talking about:casserole jobbie (http://www.lakelandlimited.co.uk/product.aspx/freshcool/foil%212514_2515_2516_2517) or pie dish (http://www.lakelandlimited.co.uk/product.aspx/freshcool/foil%212518_2519_2507_2508)?

Narcissa Malfoy
03-05-2006, 05:02pm
redhed - I say the casserole jobbie - but having said that I would just use a swiss roll tin lined with foil. That will be about the right size as well I think.

Dancing Queen
03-05-2006, 05:31pm
I'd say the casserole one too, but even the largest one there is still slightly smaller than the one Nigella suggests.... I may well get those anyway, but has anyone seen anything slightly larger?

August Girl
03-05-2006, 10:49pm
I thought swiss roll thing too but it says 6cm deep and I don't think mine is anywhere near. I have some foil trays but I think mine are a bit small. An excuse to visit Wilko's I think:wik:

Narcissa Malfoy
04-05-2006, 11:03am
ah - I didn't think about the swiss roll tin not being deep enough!!!!

In that case I will also get some of those foil jobbies. If I can't get any big enough I will just use 2 smaller ones.

Right, I was going to do the Bakewell slice as I didn't like the sound of the muffin cake, but then I realised that I didn't have my processor (Mum's borrowed it), and I actually hadn't read the recipe properly for the muffin cake, so I made that after all! :puzzled:

I didn't have any parchment paper, so I used normal baking sheets, cut to size. Everything else seemed to go to plan, and here are my pics! (sorry for the 4 pics, I just enjoyed it so much, I wanted to show all stages!)

Straight out of oven:

And again:

Out of tin, on cooling rack:

After we had our bit!:
http://i20.photobucket.com/albums/b246/suzieq1601/P1010063.jpg

It was absolutely gorgeous to eat (especially the crunchy topping); OH, Mum and I enjoyed it very much! :ellie:  The cake part wasn't very sweet, but that was ok as the topping was.

I did find that the blueberries had dropped to the bottom of the mixture, but not sure if you can avoid that?
Most of it's gone already  OH -----> :preggie:  but I've got a big piece to take to Chessington tomorrow :thumb:

Really looking ofrward to making my savoury dish in the week

Right so here is my effort at the muffin cake. It didn't seem to rise an awful lot and was quite stodgy in the middle but I did have to use wholemeal flour rice milk & soya marg so that might account for it whoever said ts not a sweet cake was right. I am going to try the Bakewell slice next week I might use white flour though as I think wholemeal even with the bran sieved out won't be very nice.

Spacedust, your bakewell slice looks lovely to me!

Biba, your cake also looks very good, was it richer a bit like a carrot cake?

Biba
13-05-2006, 10:44am
But what did it taste like??

It was all right I think if I did it again I would sieve all the bran from the flour.

AG it was very heavy but not really richer. On the plus side all the blueberries didn't sink!

August Girl
15-05-2006, 07:32pm
I've bought all the stuff Spacedust, I just need to find the right time to make it. I made a rhubarb and orange cake yesterday as that was what was in my veg box. When that's all gone I'll do it. No plum jam in Asda though! I bought cherry.

Biba
15-05-2006, 07:35pm
I am going to do the bakewell slice this week. I had a good look at the jams and couldn't decide between Damson or Rasspberry so I went for the raspberry and if its nice I will try the damson jam next time.

Narcissa Malfoy
15-05-2006, 07:37pm

AG - rhubarb and orange cake mmmmmm.... sounds delicious!!

S
xxxxxxx

It was. DH just had the last bit. I think it worked better as a hot dessert rather than a cake as it was a bit soggy from the rhubarb pieces. I liked it better cold though. And I could have done without the probs getting it out of the stoopid springform tin. Might have been better if it was in a smaller tin but deeper iyswim? Here is a pic, let me know if you'd like the recipe.

Ok here is my effort from this morning, the base was really like creamed butter and sugar when I made it as I used gluten free flour & soya marg so added some more flour (thanks AG) I think it could have been cooked for a little longer before I added the jam and almond bit but I have tried it and its yummy.

I made the Bakewell Slice today.

Had to improvise a bit though as didn't have a foil dish so used a pyrex dish lined with foil.

I also only had 2 eggs so ended up only making half of the franzipan bit, oh and didn't have almonds but did have marzipan so laid strips of this on top to decorate.

It looked fab and tasted great! I remember reading that someone thought it was like school dinner pudding - well it was but nicer :eating: OH wolfed his slice down!

All this baking is turning me into a domestic goddess - well I've got Nigella's figure, just wish I had her bank balance too!:retrogal:

Will post pics later!

Well it's nearly the end of May and it's taken me this long to get round to making one of these. I made the blueberry thing today, but only bought half the amount of blueberries  by mistake. Also forgot hazlenuts for the streusel topping so improvised (!) with crushed amaretti biscuits!

here's the evidence  I made it in a loaf tin as I want to cut it into squareish slices for packed lunches. Although it was yummy warm, with vanilla ice cream after dinner tonight.
