I've made a carrot cake today and it's turned out quite well. I looked through a number of different recipes online and plumped for a Paul Rankin one from the bbc website. I was interested in a couple of others but OH didn't fancy the sound of ones made with oil rather than butter.

I wondered if anyone could recommend other carrot cake recipes? I'm particularly intrigued to know if anyone's made it with oil and whether this makes it very heavy?

I have used oil for a lot of the carrot cake recipes I've done and they turn out really well.

Have made some nice carrot cake muffins recently which were lovely - but far too tempting!!

I have a gorgeous recipe for carrot cake, I will give you the recipe if you like. It has a lemon 'icing' made with cream cheese and it is GORGEOUS :grin:
I am sure it is made with butter not oil.

Using butter as opposed to oil will also add flavour. Not sure if it will affect the density of it. I am sure someone else will come along and answer that one :smile:

I have a recipe for a tropical carrot cake, made using oil, and I'd say it makes the cake moister than with butter, and also lighter. It also has a lemon icing made with cream cheese.

And, biggest bonus of all, it's made in the microwave and takes 15 minutes from start to finishing the washing up!

Not that I'm blowing my own trumpet (ok, then I am) but it's the nicest carrot cake I've had.

Yes please to the recipe. I like the sound of the lemon icing that both you and *kate* have mentioned!

schnapps - I bet the muffins are yummy. I bought some muffin cases today at asda. I really fancy making some muffins. I don't think any of this is going to help my diet ;).

I might have a go with one of the oil recipes just for comparison. It sounds like I might well prove OH wrong!

Recipes please girls !!

I adore carrot cake but my only stipulation is that is HAS to have cream cheese icing. None of that buttercream crap :wik: :laff:

Tropical CC

125g plain flour
1.5 tsp bicarb of soda
1 tsp ground cinnamon
0.5 tsp salt
4 fl oz oil (but I use 3)
200g caster sugar
1 large egg
90g canned crushed pineapple (half small can with half juice)
150g carrots grated
45g dessicated coconut
handful chopped walnuts (but I substitute sultanas sometimes)

Blend it all in food processor. Microwave on high for 10 minutes (until it looks cooked). I use a round microwave dish - this seems to give the best cooking, rather than a square dish IYSWIM? It's cooked when the bubbles on top of the cake just start to disappear.

Icing - 60g low fat philly
30g butter
200g icing sugar
2 tsp lemon juice
few drops vanilla extract
4 tbsp dessicated coconut

Mix and spread over cake. tbh I only use the cheese and butter measurements and add the icing sugar until I get a good consistency with the lemon juice, v extract and coconut.

I've also substituted the carrots for courgettes and bananas. Both were nice but the carrot is better.

The recipe I use is from a Vegetarian cook book.

6oz soft brown sugar
6floz ground nut oil
3 eggs beaten well
8oz carrots, finely grated
4oz raisins
3oz mixed nuts, chopped (optional)
6oz self-raising wholemeal flour
1tsp bicarb of soda
1tsp ground cinnamon
1tsp finely grated orange rind

-mix together the sugar,oil and eggs in a large bowl.
-stir in the carrots, raisins and nuts.
-mix the flour with the bicarb, cinnamon and orange rind.
-add these to the bowl and mix lightly.
-when mixed put in a greased loaf/round tin.

Gas mark 4 1-1 1/2 hours (I keep checking with a skewer after an hour)


I'm not keen on the cream cheese topping so I use well whipped whipping cream instead, about 150ml of it. :wik:

Ok, here is my recipe :grin:

2 eggs, separated
8oz soft brown sugar
6oz sunflower margarine
2tbsp warm water
5oz wholemeal flour
1tsp baking powder
1/2tsp mixed spice
pinch of salt
1oz walnuts
1oz sultanas
6oz carrots

Topping
4oz medium or full fat soft cheese
4oz icing sugar
Grated zest of 1/2 lemon


Preheat the oven to Gas Mark 5/190C/375F. Grease and line the base of a 7" cake tin or 2lb loaf tin
Mix egg yolk, sugar,butter and water together
Mix dry ingredients together and then add the nuts, sultanas and carrots
Make a well in the centre of the dry ingredients and add the liquid ingredients. Stit together and mix well
Whisk the egg whites to soft peaks then fold carefully into the cake mixture
Pour into the tin and bake for 40-50 mins. (Cake is ready when a skewer inserted into the centre comes out clean)
Cream together the icing sugar and cream cheese, add lemon zest and swirl over the cake.

The only bad thing about it was that there was far too much to fit in the tin, and it was quite oily, but it tasted amazing!

Suzie, this is the recipe I used. I agree that there was far too much and it was quite oily. If I make it again I think I'd probably half the quantity. Though, I might try some of the other recipes for comparison :grin:.

Went to a housewarming party last night and the lass who's house it was is a real foodie and excellent cook. She had made allsorts aswell as Carrot cake. We talked about each others recipes and the only difference was that instead of using raisins she put chopped dates in. It tasted amazing, especially with the mascaponie topping :faint: :thumb:
