View Full Version : Help! I need a foolproof birthday cake recipe

MIL usually makes us all birthday cakes, but no...this year I decide I have to be miss 'super mum of the year' and bake her one myself :roll:. Not only that. but it'll be decorated as a dragon!

Does anyone have a nice, light, easy to make victoria sponge type recipe?

The decoration will come from what I'm sure will be a rather misleading titled book called 30 Minute kids cakes! The pages I aquired didn't actually have a cake recipie in it. Doh!

Yes, I made one from James Martins Great British Dinners book, it came out fabulous. I can type the recipe if you want?

Okay.....

Granny's Victoria Sponge

Makes a 20CM Sponge

200g (7oz) unsalted butter, softened, plus extra for greasing
200g (7oz) caster sugar
1tsp vanilla extract
4 eggs
200g (7oz) self-raising flour, sifted, plus extra for dusting

to serve;

double cream, whipped (although I made buttercream instead)
raspberry jam
icing sugar

Method:

Pre-heat the oven to 190c/gas mark 5

Lightly grease and flour 2 x 20cm (8inch) sponge tins, at least 4cm (1.5inches) deep. Line the bases with parchment paper.

Beat the butter and caster sugar together until well creamed. Add the vanilla extract. Gently mix the eggs together in a small bowl, then add, little by little, to the butter mixture. Once all the eggs have been combined, fold in the sifted flour and divide the mixture between the tins.

Bake for 20-25 minutes, until well risen and golden brown on top. Once cooked, turn out and leave to cool on a wire rack.

Fill with whipped double cream and raspberry jam and sprinkle with a dusting of icing sugar.
