Right - here we are up and running. Let's hope we have LOTS of success stories - so far I think it's been pretty successful in terms of inspiration (well it has for me anyway :wik: )

Noo noo chicken, can you repost your other stuff on here????

Well I've got a pretty short week with regards to opportunities to cook as I'm out tomorrow night ( :ellie: girls night out :ellie: ) and we're away for the weekend (not so exciting)

This week I shall be cooking:

Tiger Prawn risotto with lobster sauce
Paella
marinated moroccan lamb with roasted veg couscous and a harissa sauce
Pork Burgers

and I need something else to inspire me for one more meal...............

So inspiration purlease.................

Doing some old favourites this week (well things which are in the freezer...so bolognese sauce and a potato topped pie of some description)

but new recipes being tried this week are:

roast pork fillet stuffed with mushrooms with potato wedges and broccolli
turkey vegetable cobbler (always been intrigued what a cobbler is so am giving it a whirl).

Will report back later in the week.

OK - last week I did

Easter Lamb Casserole (thanks LJJ!)
Leek & Cheese Crusted Shepherds pie (thanks Katkinn!)
Spinach, ricotta and parmesan flan
Lime, coconut and corriander salmon

This week I'm planning

Italian Broccoli and Salmon Bake
Chicken & Pesto Roll Ups
Tagliatelle with a Lemon Pork Ragu
Sausages with Onion Marmalade Gravy and Sweet Potato Chips

All I know is that this week we are having Paella (tonight!!! :laff: ) and I really don't know the rest of the week, so really will be using this thread as inspiration!

I have a sausage glut to use up! We had a brunch yesterday and quite a few people didn't come so I have some surplus!!!

Tonight we are having pasta sausage bake, with red peppers, courgettes, pesto and, hmmm, whatever else I think might work with it! I will just slice the cooked sausies and throw them in with maybe a bit of wine and some parmesan and the sliced/cooked veggies.

On Wednesday I am making chicken stuffed with spinach, feta cheese and pine nuts.

Beyond that I have no idea for the week, so will be watchinig for inspiration.

All I know is I feel SO fecking fat right now I have to try to do healthy meals because I MUST lose some weight before someone harpoons me in the street :(

Reporting back on my sausage bake ;), lordy it was LUSH and I will SO make it again! :clap:

Here's what to do:

Slice up some cooked sausages.
Chargrill and slice a red pepper
Slice up some courgettes
Cook some penne
Mix a tablespoon or so of pesto with about a cup of cooking water from the pasta.
Mix all this together in a casserole dish, and stir in some grated cheese, and Ialso used some boursin (garlic) I had leftover, as well as parmesan.
Stir in some spinach
Tip in the pasta when it's cooked and then bake for 15 mins.

YUMMY^!

Tonights Tagliatelle with a Lemon Pork Ragu was lush and I will definately be doing it again! I've never cooked with minced pork before so this thread is helping me to broaden my cooking horizons.

Salmon tonight but no idea what the rest of the week will bring....
Will marinade it in soy, honey, tsing tao and sesame oil and serve with rice and brocolli
Had tuna pasta last night (well, DH and James did but I went out :ellie: )
Am doing an Ocado shop as I type so NooNoo if you can post that recipe I'd be most grateful :D

Will post the recipie tonight but it won't be till later as I have hairdressers for cut and colour after work

The ingreedients as I remember them are

olive oil
lemon rind
parmesan
taglatellie
pork mince
garlic
onion (I used shallots)
parsley
white wine
pancetta

hope that helps with the shopping list!

oh noo noo I'm looking forward to seeing that recipe!! I LOVE anything with lemons in!! (even though DH doesn't really like pork or lemons so probably not his idea of a dish from heaven!!)

Well I've decided what I'm having later in the week for my one meal that I couldn't decide on!!

Lamb kebobs with tahini dressing, red onion and tomato salad with herby couscous and feta. YUMMY!!!!!!! (cheap and easy :ellie: )

And on Saturday night (now that I'm not going to the wedding and my mum's going to be here) we're going to have pizza :ellie:

Just to warn you it needs much longer in the oven than she says - 1hour+ Kat never told me this :rolleyes: so mine was a bit :zombie:

The low fat version I always use shitake mushrooms (probably about 150g with the remainder of the mushrooms being normal or chestnut), I then leave it for 20 mins, stir, 20/25 mins, stir, cover with tin foil and back in the oven for AT LEAST another 10 mins. Basically the rice should be soft and not have much of a bite (well imho for it to taste the best!!)

You also need a lot of S&P and I always put LOADS of parmesan on it which makes a mammoth mammoth difference.

I've tried both recipes and the low fat one is miles miles nicer!!!

I can also highly recommend the Tiger Prawn Risotto with Lobster Sauce that she does!!

Well last night I made these

But I made the lamb kabobs in patty shapes (ie mini burgers) and they were loads better than when I've done them before.

I also didn't bother with the flat breads as they are a LOT of effort and not that great tbh. I did couscous with loads and loads of herbs (coriander, mint, dill and parsley) with extra virgin olive oil and lemon juice.

And served it with a red onion (marinated in lemonjuice like the recipe says - it's really lovely) and tomato salad.

And the tahini dressing.

Absolutely divine. Even DH was "god this is scrum"!! :ellie:

One thing I would say is use a small garlic clove for the tahini dressing as I used a biggish one and it was REALLY garlicky!!

That sounds lovely Katkinn - think I might bookmark that for another week.

Also intrigued about doing a risotto in the oven as always do mine on the burner. But I suppose you do rice pudding that way and risotto is the same thing!

LOL - I have just found this out!!!! :lol: :lol:

I just covered it with foil and left it in and it was lovely! :clap:

I agree Katkinn - I prefer the rice soft as well.

I may try that tiger prawn risotto as well now!

NooNoo - just to let you know I tried the lemon pork ragu tonight and it wsa gorgeous (although James wouldn't touch the tagliatelle :huh: which is v weird as he's normally a pasta monster :roll: ) The only thing was that it was quite "wet" so I had to boil it quite vigorously at the end but it will be making more frequent appearances in the Shamu household from now on :D

Did my pork mushroom stuffed thing and it was lovely. Made a nice gravy to go with it and will doing that one again.

I have been totally uninspired recently so I think I'm going to have to start following these threads more. I'm getting bored with the same old things but very difficult when I'm trying to diet too as it's just easier to do the same recipes that you know the point value for !
