Try this recipe
Classic Flapjacks
175g/6oz butter, cut into pieces
140g/5oz golden syrup
50g/2oz light muscovado sugar
250g/9oz oats
preheat the oven to gas mark 4, line the base of a shallow 23cm/9in square tin with a sheet of baking paper if the tin is non stick,
put the butter, syrup and sugar in a medium pan. Stir over a low heat until the butter has melted an the sugar has dissolved,
remove from the heat and stir in the oats
press the mixture into the tin. Bake for 20-25 mins untill golden brown on top (follow the longer time for a crispier flapjack)
Allow to cool in the tin for 5 mins then mark into bars or squares with the back of a knife while stll warm. Cool in the tin completly before cutting an removing, (this prevents it from breaking)

Thank you Flutterby
I am assuming I can use soya marg instead of butter (DS and DD are allergic)

I think flapjacks taste even nicer if you replace some of the syrup with honey.

Can anybody tell me why my flapjacks keep falling to bits? I've tried 3 or 4 different recipes now, and they're all the same - taste quite nice but the oats just don't hold together at all. It's just soggy crumbly oats, not like a cakey thing at all. I've tried tweaking the quantities but it still doesn't work.
I'm using Jordan's conservation grade porridge oats. And soya marg. Are those both OK?

Sometimes I have the same problem Red, and I don't know why.
It is definitely worse if you don't leave it to cool COMPLETELY before removing from the tin, and don't even score it until at least 10 mins after taking out of the oven.
I use a Delia recipe which has some ground ginger in it, which really takes the edge off the sweetness.

Red - i have recently started using large oats and they seem to stick together better? I use the Organic Flahavans oats?
best of luck
