View Full Version : I've just made beetroot muffins
And they are yummy. :)
Just thought I'd share. I got the idea from a website which had a recipe for beetroot cake (think like carrot cake) and I had 8 beetroots from my veg boxes, so half made a soup and half made muffins.
It is a shame they won't last long and I'll be forced to eat them all by Friday. :lol:

Oooh I saw this recipe on moneysavingexpert.com meant to try it and then promptly forgot about it! Haven't had any more beetroot in our veg box since then.

I'm hoping to start getting a veg box next week, I hope they don't give me loads of beetroot though, I have NO idea what I'd do with it.

I've been wrapping them in foil and baking them in the oven like a jacket potato, you can then eat them warm or chill and slice them to have with salads etc.

Damz - that is just what I thought, but figured as I had a load I'd try it anyway and I'm pretty chuffed wth the results. :) BTW I've just made Damsels my homepage - I love it. :)
AG - I'd only ever eaten beetroot in small quantities before we started the veg box. So I would guess you'll get a few, but I think they are out of season at the moment. We've made:
Beetroot pasta salad
Roasted Beetroot Risotto
Beetroot soup
Borsch (ok I know not much good for you, but also helps to use up the cabbage you get too and is very tasty, actually mayvbe you could do it wihtout the meat we put in)
Beetroot Muffins
We also use

The jacket beetroot, like a jacket potato idea sounds great, I think I'll try that next time we get them . :)
