What do you use?

It's one of those jobs that I hate, so probably don't do it as often as I should  but all that does is make it even harder to get it clean

Is there any miracle stuff that you can, for instance, spray on, leave, and it gets all the grease and food off without too much elbow grease?

Mr muscle and the like.

Be warned though, they're vicious alkalis, so you need to be really careful not to burn yourself (and the burns can be delayed several hours after you get it on your skin).

If it's really bad get Ovenclean to come and sort it out for you, God know's what they use but your oven ends up looking like new again. Then it's easier to try and keep it in that condition, iyswim.
