Does anyone have any great ideas for freezer cooking?
I have started making a big cottage pie every so often and freezing it into seperate portions so I can just bung them in the oven on my lazy nights. I would like to make other dishes too, does anyone have any suggestions - nothing too faffy.

If I'm doing a chilli or bolognese sauce I tend to double the quantities and freeze one.
The other thing I tend to do is cottage pie type things but vary what is under the potato. Fish pie would probably freeze well, don't make it myself as DH hates fish.
Other things I have done are meatballs in a tomato sauce.

I never thought of doing chilli and bolognese in double quantities! DOH good idea though!
pork and beans - pork in a tomato and bean sauce with onions and cabbage, I often use a can of baked beans for the tomato sauce
chilli/spag bol/shepherds pie
borsch - beetroot, cabbage, chicken , carrotand potato stew
pasta sauces - I make up too much (usually by accident) and then freeze the left overs, makes a really easy and quick meal when you get round to it
soups
I cook enough fish pie to freeze, but never end up freezing it because we like ti so much we eat it all!
Enchiladas (same as above!)

Like snapps I always do double (or more!) of chilli, bolognaise, normal savoury mince, meatballs, burgers and freeze the extra.
All soups and casseroles/stews I do the same.
Pizza bases and sauce.
Mince dishes are especailly good to freeze!

I always want to freeze stuff, but Im so scared of not defrosting it properly, that I leave it in the fridge and it normally gets wasted. :doh: So any tips for good derfosting too?

I was going to ask this too! My problem is I love cooking but when its just for me (Kenidee is very fussy) I don't see the point or end up wasting it :roll: but I am always put off freezing stuff incase I don't defrost properly or something
plus I never know what I can freeze and what I can't
