For Lady M's M! You don't have to use mushrooms, I think I'm going to try it with chopped spinach next time :thumb:

Again adapted (changed a lot :oops:) from Indian Food Made Easy by Anjum Anand.

Mushroom and nut spiced pilaf - Serves 2

150g basmati rice
200g sliced mushrooms
2 cloves garlic chopped.
Handful of cashew nuts
Handful of Almonds
1 tsp cumin seeds
2 bay leaves
0.5 stick of cinnamon
8 cardamom pods
1 tsp veg oil

Cook rice

In separate pan fry mushrooms and garlic (I classily use frozen mushrooms :oops: Don't ask! which means that you don't need any other oil as there's so much liquid in them. Drain liquid and put to one side)

In another small pan, heat oil and add nuts and all spices and fry until coloured.

When rice is done, drain and if serving straight away, add mushrooms and nuts and spice mix.

I nearly always cook everything and mix in a baking dish, cover with tin foil and leave in an oven on 100degrees till serving.

Spiced nut pilaf is just the same without the mushrooms!! Works depending on which curry you're having.
