My SIL is coming to visit this week and is a big prawn lover so I'd like to do her something really scrummy. She's v healthy too so I'd prefer something fairly low fat. Am thinking maybe a noodle dish :scratchchin:

Got masses of yummy big prawns in the freezer. Any suggestions?

Sweet chilli prawn stir fry with noodles - yum.

Or, a prawn curry - although they usually contain cream or coconut milk which aren't the healthiest!

Chickpea made me a delicious meal on holiday of chili prawn pasta. Included all the above, natch! Plus creme fraiche, chopped tomatoes, onion and garlic. Was FAB!

I think Katkinn's pork and peanut noodles would work really well with prawns instead.

Prawn curry is doable. If you want a quick meal

fry some onions
bung in a quarter a jar of curry paste...we like balti best
half a tin of tomatoes
bout 250ml water
then frozen or fresh cooked prawns
Warm it all though
all done.

If you are feeling ambitious you could do your own paste:nod:

Ooooh you must try this - I made it a few weeks ago for MIL who loves prawns too. It turned out lovely and it was so so easy to make. :thumb: :eating: I did use a splash more wine than it calls for though

I'd second Delia's Pad Thai recipe - it is utterly delish. Mind all other ideas also sound lovely.
