What shall I do with my sausages?

Normally we'd have them with some form of mash and then have any leftovers chopped up in pasta another day but today we don't have enough potatoes.
Any good ideas for how to have them?

We've got pasta of just about every shape, white/brown/basmati/risotto rice, couscous etc but I can't think what would go well.

Mmmm, I really fancy sausage casserole now, but I usually make it with the packet mix. I'm trying to avoid doing that these days, does anyone have a 'from scratch' recipe?

In the end I grilled them and had them with pasta in a tomato based sauce - then the leftovers in a sandwich with a fried egg for lunch today!

Suzie, I do casseroles by part cooking the sausages and then sticking them in the oven with either a tin of tomatoes + a few herbs (easy option) or some stock, fried onions, chopped veg such as carrots etc and might take inspiration from the type of sausage eg if they have apple in might put an apple in the casserole.
